Tasting notes
Color:deep, bright and crystal amber.
Nose: chamomile dried flowers, saffron, hazelnuts, candied fruits and raisins.
Flavor: rich, full bodied in the mouth, gently sweet with raisins and dried fruits notes.
Suggested food pairing: moulded and long seasoned cheeses, creamy desserts.
Recommended serving temperature: 8-12°C
Grape and vinification
Grape variety: Vitigno Innominabile ( Erbaluce ) 100%.
Yield per hectare: 70q.
Final Yield per acre after pressing: 25q
Vinification: vgrapes are harvested in September and let dry up until Feb-March. A slow-paced fermentation takes place in small wooden casks.
Aging: 12 months in small wooden casks and 12 months in bottle.
Longevity: may last as long as great red wine provided it is well kept.
